The perfect vegetarian burger

The bread roll

20g Yeast

20g Sugar

1tsp Salt

40g Oil

170ml Water

345g Flour

First of all, mix the yeast, sugar, salt and the oil with a little bit of the water. Add the flour and the rest of the water, mix again and then leave the dough rise for about one hour. 

After that, split the dough into seven to nine pieces (depending on how big you’d like to have the buns) and form them into balls. Then, let them rise again for another hour. 

The dough now should have flattened at their bottom and got that typical burger bun form. Now brush them with egg white and put some sesame on top. While you’re doing so, heat up the oven to 185°C. When you’re done brushing, bake them for approximately 15 minutes until they are gold-brown.


The zucchini patties

700g Zucchini

300g Cheese

125g Butter

125g Breadcrumb

1 Onion

1 Egg

Cut the zucchini into slices and cook them in salted water for 6 minutes. Meanwhile dice the onion, melt the butter and rasp the cheese. Then, decant the water from the zucchini and add all the ingredients above. Let everything rise for 10 minutes. Now form the veggie dough into patties and roll each of them in flour. Throw them into the pan, add some oil and roast them from both sides until they are brown.
